Pam Vieau, our resident chocolatier and confectioner, has more than 16 years experience in small run confection production and retail product development.   Additionally, she has worked for industrial confection companies developing new confection products including nutritional additives, flavors, and the incorporation of combining specific ingredients in the client’s current product line to produce a new confection.  As a chocolate consultant, she  provides specialty training courses to meet the client’s specific requirements.
